Inspired by the bustling street food stalls of Japan and the comforting chaos of Southeast Asian night markets, our chefs wanted to reimagine the classic katsu curry—but give it the Banana Tree treatment. Think crunch, umami, heat, and a touch of theatre.

We start with a base of crisp baby gem lettuce, then stack on your choice of crispy chicken or plant-based vegan schnitzel. A generous swirl of spicy sriracha mayo adds heat and creaminess, while a crown of crispy vermicelli noodles brings an unexpected crunch. It’s all nestled in a warm, lightly toasted shokupan bun —a traditional Japanese milk bread known for its soft, slightly sweet flavour.
