As the weather heats up, we tend to crave a buzzy beverage or two after a long work day. Luckily, Banana Tree’s extensive cocktail menu is full of light and refreshing drinks for summer—with an incredible happy hour to match. Here’s what you need to know about Banana Tree’s awesome beverage offerings for summer, and an Indochinese-inspired cocktail recipe that you can make in the comfort of your own home.

Want to enjoy a tipsy treat without breaking the bank? You might not expect a Thai restaurant in Milton Keynes to have a noteworthy happy hour, but all of Banana Tree’s Indochinese restaurants offer great deals on cocktails. Our happy hour lasts from 12pm to 8pm on Monday through Friday, and from 12pm to 5pm on Saturday and Sunday. During these times, our pitchers are only £18.50, and all our happy hour cocktails are only £7.95. And when you buy one glass, you get another of the same free!

The hardest part of happy hour at Banana Tree is deciding which cocktail you want to try first. If you’re a traditionalist, go for the Pina Colada, a rich concoction of rum, pineapple and coconut cream. If you’re looking for something a little different, order the Pink Panther, a mix of tequila, lychee juice, peach schnapps, lime juice and grenadine. And if you want something heavy on the booze, may we suggest the Long Island? With vodka, triple sec, gin, rum, tequila, fresh lime and cola, it’s sure to help you have a good time.

If sharing is more your style, our pitchers are a great option. We offer Come Love Me Longtime in pitcher form. With passoa, vodka, freshly pressed passion fruit and lemonade, this pitcher is perfect for people who are keen on tropical flavours. Banana Tree’s cocktail menu has something for everyone, but we understand that sometimes you want to make a little cocktail to enjoy at home. That’s why we’ve provided this recipe for the Singapore Sling, a classic Indochinese cocktail that was invented in Singapore in 1915. Recipes for the drink vary, but most of them include gin, pineapple juice, and cherry brandy to give it a rosy glow. Its fruity flavours and light effervescence make it ideal for sipping in the garden on a sunny day. You can even serve it at a cocktail party—with its striking pineapple garnish, it’s sure to have guests buzzing! 

Singapore Sling

Serves 1 

4 oz. pineapple juice

1½ oz. gin

1 oz. fresh lime juice

½ oz. cherry brandy

¼ oz. Cointreau

Chilled club soda

Pineapple slices, for garnish 

In a cocktail shaker over ice, combine the pineapple juice, gin, lime juice, cherry brandy and Cointreau. Shake well, then pour into a highball glass over ice cubes. Top off with the club soda and garnish with the pineapple slices.
