But on the nights when you have just enough energy to throw something together quickly, stir-fry is always an excellent option. Heat some oil in a wok or a frying pan, toss in some vegetables, coat it all in a sauce of your choice and you’ll have a meal on the table in minutes. It’s the perfect dish for using up whatever is hanging out in your fridge, and you can adjust the seasoning according to your tastes.
Still not convinced? Perhaps you’re scarred from your mum’s less-than-appetising take on stir-fry that consisted mostly of canned veg cooked into a weird mush or the time you ordered takeaway stir-fry from that Malaysian restaurant and ended up with a few sad slices of beef in a watery soya sauce. Chilli, Ginger and Basil Stir-Fry with Chicken
For the sauce
3 tbsp. yellow bean sauce (available at Asian food shops)
1 tbsp. honey
1 tbsp. rice vinegar
1 tbsp. soya sauce
1 tsp. sesame oil
For the stir-fry
2 tbsp. vegetable oil
2 chicken breasts, cubed
1 red onion, sliced
2 garlic cloves, minced
4cm piece of ginger, peeled and minced
1 red chilli, minced
1 head of broccoli, trimmed into florets
300g mushrooms, sliced
8 baby corn
1 red bell pepper, cut into strips
Rice or noodles, for serving
Chopped Thai basil, for garnish
Make the sauce
In a small bowl, whisk together all of the sauce ingredients. Set aside.
Make the stir-fry
Heat the oil in a large frying pan or wok. Add the chicken and stir-fry until golden on the outside and cooked through. Add the onion, garlic, ginger and chilli and cook until fragrant, about a minute, then add the broccoli, mushrooms, baby corn and red bell pepper. Continue to cook, constantly stirring and tossing, until vegetables are just cooked through but retain their crunch. Stir in the sauce, adding some water if it needs more liquid, then remove from the heat. Serve over rice or noodles and garnish with Thai basil.
